Strawberry Swirl Cheesecake Popsicle Recipe

I know I’ve said it before, but I’ll say it again, I love cheesecake, any flavor, any time, anywhere. Cheesecake has been and always will be my favorite dessert.

Not only do I love cheesecake, but I love just about everything cheesecake flavored, cheesecake yogurt, cheesecake ice cream, etc, etc. you get the point, in my mind, you can’t go wrong with a creamy cheesecake flavor!

That being said, though I have to admit that up until about a month ago I had never tried a cheesecake popsicle before, I’d been meaning to try making some for a while, but simply hadn’t gotten around to it.

Till one day I decided it was high time I gave them a try and made good use of the frozen strawberries I found in the freezer. And thus this fun, creamy, and delicious frozen treat was born!

I’m happy to say these homemade popsicles turned out exactly as I hoped they would. This strawberry cheesecake popsicle recipe perfectly combines the flavors of cheesecake and fresh strawberries, to create the perfect summer treat!

These popsicles are perfect for hot days, the 4th of July, Mother’s Day, BBQs, picnics, and all your summer get-togethers! And they are sure to be a hit with non-cheesecake lovers too!

Strawberry Swirl Cheesecake Popsicle Recipe

Equipment

Ingredients

For the cheesecake layer

  • cream cheese, softened
  • white sugar 
  • plain Greek yogurt, you can also use sour cream
  • whole milk, or milk of choice
  • vanilla extract

For the strawberry swirl

  • fresh or frozen strawberries, if you are using frozen strawberries, let them thaw for 10-15 minutes before making the popsicles 
  • simple syrup, or sweetener of choice, option

Graham cracker crumbs-optional

  • finely crushed graham cracker crumbs
  • sugar
  • butter, melted

How To Make Strawberry Swirl Cheesecake Popsicles

​In a small bowl combine the graham cracker crumbs, 2 tablespoons sugar, and melted butter, mix until the crumbs have soaked up all the butter, and set aside.

In an upright blender or a food processor, combine the strawberries and sweetener of choice, and puree until smooth(you can add a little water if you are having trouble getting the berries to blend.). Transfer the mixture to a small bowl, and set aside.

For the cheesecake mixture, you can make it in your blender or food processor. Or you can make it in a mixing bowl and mix it with electric beaters.

Combine all of the cheesecake ingredients and mix until smooth and creamy.

Spoon or pour the cheesecake mixture into your popsicle molds, filling them roughly 1/2 of the way up. Next, spoon or pour roughly 2-3 tablespoons of the pureed strawberries into each mold, then fill the mold the rest of the way up with the remaining cheesecake mixture.

Take a popsicle stick, and gently swirl each popsicle to mix the strawberry and the cheesecake mixtures together. Place a popsicle stick into each mold, be sure to push it down all the way to make sure it is touching the bottom of the mold.

Sprinkle the buttered graham cracker crumbs around the popsicle sticks, doing your best to divide it evenly among the popsicles.

Place the finished popsicles in the freezer and allow them to freeze for 4-6 hours, or overnight, before removing them from the mold.

Recipe Notes

I like to remove my popsicles from the mold, then place them on a parchment-lined baking sheet, and return them to the freezer for 10-15 minutes. This allows them to freeze solid again, and helps to prevent them from sticking together! See my tips and tricks below for removing popsicles from their mold.

These cheesecake popsicles can be stored in a freezer bag or an airtight freezer-safe container in the freezer for up to 3 months!

You can easily use the cheesecake mixture in this recipe to create different flavors of cheesecake popsicles, below are a few of my favorites!

Blueberry cheesecake Popsicles – combine the cheesecake mixture above with fresh or frozen pureed blueberries, and top with graham cracker crumbs.

Blackberry Cheesecake Popsicles  – ​ combine the cheesecake mixture above with fresh or frozen pureed blackberries and top with graham cracker crumbs,

Raspberry Cheesecake Popsicles – ​combine the cheesecake mixture above with fresh or frozen pureed raspberries and top with graham cracker crumbs.

Cherry Cheesecake Popsicles – combine the cheesecake mixture above with halved fresh cherries, transfer the mixture to your popsicle mold, and top with graham cracker crumbs.,

Lemon Cheesecake Popsicles – ​combine the cheesecake mixture above with fresh lemon juice, and top with buttery graham cracker crumbs.

You can also use any of your favorite frozen or fresh fruit or frozen or fresh berries. You can even create more exotic flavors by using pureed mango, pineapple, or pomegranate!

How to easily get homemade popsicles out of the mold  

Getting your popsicles out of the mold can often be tricky, and is honestly one of the hardest parts of making homemade popsicles. Thankfully I found, a quick, easy, and nearly fool-proof way to get popsicles out of the mold!

Fill a dish, or a sink, that is roughly the height of your mold, with warm water(warm NOT hot water). Gently place the mold in the water, be sure that the water doesn’t touch the popsicles themselves, just the mold. 

Allow the mold to sit in the water for 20-30 seconds, remove it from the water, gently wiggle the popsicles around, and pull them out.

Again I like to place mine on a baking sheet and put them back in the freezer. This allows them to freeze solid again, without sticking to each other!
