Easy Cherry Cheesecake Popsicles

If I could figure out a safe way to live on cheesecake, I’m pretty sure I would. I don’t know what exactly it is about cheesecake, but I love it almost more than any other food in the world and definitely more than any other dessert. Which might explain the number of cheesecake and cheesecake-related recipes I’ve shared over the years.
To say I’m in love with it might be an understatement, and I’ll find some way or other to make cheesecake a part of every sweet treat I make, and these cherry cheesecake ice pops are no exception. As a matter of fact, I’ve shared a few cheesecake popsicle recipes on the blog already!

These popsicles are something I had wanted to make for over a year. I had the idea while I was working on my strawberry cheesecake popsicle recipe, but simply ran out of time and summer to make them.
Still, I had a feeling that fresh cherries and a creamy cheesecake were sure to go well together. And this recipe happened to not only taste amazing but also turn into a delicious and refreshing sweet treat perfect for any hot summer day.

From parties to lazy Saturday afternoons, it’s hard to go wrong with these easy cherry cheesecake popsicles.
Not to mention, you need only six ingredients to make them, and it takes less than 10 minutes to prep and pop in the freezer!

How To Make Cherry Cheesecake Popsicles
Equipment
- popsicle mold
- wooden popsicle sticks
- a high-power blender OR a food processor OR an electric hand mixer.
Ingredients
- full-fat cream cheese, softened
- white sugar, you can also use cane sugar
- Plain Greek yogurt. You can also use sour cream. Just be sure to use full-fat
- Whole milk, or milk of choice, non-dairy milks, such as almond milk and coconut milk, will also work for this recipe
- Vanilla extract
- fresh pitted cherries, halved. Any kind of sweet cherries will work for this recipe. I usually pick up whatever happens to be at my local grocery store or farmers market. If you are in a pinch, though, you can use frozen cherries as well!

Directions
In a large bowl, combine the softened cream cheese and the Greek yogurt and beat on medium-high speed until smooth and creamy.
Add the sugar, milk, and vanilla and mix until combined. Then add the halved cherries and fold them into the cheesecake mixture with a rubber spatula or wooden spoon.
Spoon the finished cherry cheesecake mixture into your popsicle mold, leaving roughly an inch of space between the top of the popsicle and the top of the mold.
Place a popsicle stick into each one, being sure to push it down all the way so that it is touching the bottom of each popsicle mold. Place the finished popsicles in the freezer and allow them to freeze for 4-6 hours, or overnight, before removing them from the mold. (see below for my quick and easy way to remove posicles from the mold!)

Recipe Notes
These cherry popsicles can be stored in a freezer bag or an airtight freezer-safe container in the freezer for up to 3 months!
I like to remove my popsicles from the mold, then place them on a parchment paper-lined baking sheet, and return them to the freezer for 10-15 minutes. This allows them to freeze solid again, and helps to prevent them from sticking together!
If you like, you can decorate the top of each popsicle with halved cherries or add a sprinkle of graham cracker crumbs. (I would highly recommend using buttered graham crackers!) You could also add a drizzle of melted chocolate to these popsicles once they have been removed from the mold.
If you aren’t a fan of using halved cherries or you are making this recipe for very young kids, you can use cherry puree in place of the fresh cherries. You could even make these popsicles with store-bought or homemade cherry pie filling, to create the perfect cherry dessert popsicle!

How to easily get homemade popsicles out of a popsicle mold
Getting your popsicles out of the mold can often be tricky, and is honestly one of the hardest parts of making homemade popsicles. Thankfully, I found a quick, easy, and nearly fool-proof way to get popsicles out of the mold!
Fill a dish, or a sink, that is roughly the height of your mold, with warm water(warm, NOT hot water). Gently place the mold in the water. Be sure that the water doesn’t touch the popsicles themselves, just the mold.
Allow the mold to sit in the water for 20-30 seconds, remove it from the water, gently wiggle the popsicles around, and pull them out.
