Homemade Root Beer Float Ice Cream Bars

These super easy 2-ingredient root beer float ice cream bars can be whipped up in less than 10 minutes! They taste exactly like a classic root beer float, and make the perfect on-the-go summer treat!

Summer around here means a few different things, I will be living outside, my hair will always be a mess, and I will be eating an unholy amount of ice cream, and anything related to ice cream.

Ice cream is my all-time favorite thing to eat, I’ll eat it anytime anywhere even when it’s 30 degrees below zero. But I also love pretty much anything ice cream-related, anything cold and sweet, is perfection in my mind, especially during the summer.

Popsicles, sorbet, malts, shakes, ice sandwiches, and floats, are all in abundance around here May-September. Between my love of ice cream and always having little ones running around, I’ve gathered quite a stockpile of quick and easy summer recipes.

But this recipe might just take the cake! With only 2 ingredients it couldn’t be easier to make and is a much easier, and less messy take on the classic summer treat.

I’ve been a fan of root beer floats ever since I can remember, but they can be a bit problematic. Especially if you are trying to make for a group and that group happens to contain small children.

These ice cream bars allow you to enjoy the fun and flavor of a classic root beer float without the cups and spilled soda! They are perfect to make along for summer trips, serving at parties, for the 4th of July, and more!

And like I said they couldn’t be easier to make! If you like ice cream, root beer, or easy summer desserts then this recipe is for you!

How to make Root Beer Float Ice Cream Bars

Ingredients

  • Softened Vanilla Ice Cream
  • Root Beer –I like to use A&W root beer

Directions

Take the ice cream out of the freezer and allow it to thaw for 10 minutes or until soft.

Transfer the ice cream to an upright blender, add the root beer, and blend on high speed until the mixture is smooth and creamy.

Pour the mixture into your popsicle mold(mine makes 10), stick the popsicle sticks in, and place them in the freezer.

Allow the ice cream bars to freeze completely before taking them out of the mold, for at least 4-6 hours. But I like to let mine freeze overnight.

Remove the ice cream bars from the mold, and place them on a baking sheet. Return to the freezer and allow them to freeze solid again.

Serve or transfer them to a freezer bag and then place them back in the freezer until ready to eat.

Notes

These ice bars melt fast! So be sure sure to refreeze them after removing them from the mold before serving or putting them in a freezer bag. Also, be sure to keep them completely frozen until ready to serve.

You can also make root beer float ice cream bars without a blender! Place a small scoop of vanilla ice cream into each mold, using a spoon push it down to the bottle, stick a popstick in it, and freeze for 30 minutes. Once the ice cream has frozen again, pour the root beer on top, then return it to the freezer for 4-6 hours or overnight.

These ice cream bars are also great with other soda flavors! Orange is a big hit around here, but Coke, lemon-lime sodas, and more also work great!

Here’s a quick, easy, and nearly fool-proof way to get popsicles and ice cream bars out of the mold! Fill a dish, or a sink, that is roughly the height of your mold, with warm water(warm NOT hot water). Gently place the mold in the water, be sure that the water doesn’t touch the popsicles themselves, just the mold. Allow the mold to sit in the water for 20-30 seconds, remove it from the water, gently wiggle the popsicles around, and pull them out.
