Pineapple Mango Kombucha Popsicles

When warm weather hits frozen treats are a must around here, from popsicles to ice cream, to just plain frozen fruit. And over the years I’ve made dozens of different popsicles and ice cream bars, some we’ve loved, others we’ve hated, but regardless of how the recipes turn out, I know one thing for certain. As soon as hot weather hits, there will be ice cream, popsicles, and more overflowing our freezers!

To be honest, though I’ve never really cared for popsicles, they were always too plain or too sugary for my liking, and even from a young age, I couldn’t really justify spending so much money on flavored ice, especially when there is ice cream right there…

And as I got older, I found new reasons to no longer enjoy popsicles. It shouldn’t have come as any surprise, but I was a little shocked to learn about all the bad stuff put in the popsicles we buy from the store.

I know Frozen desserts and snacks are a necessity in life, especially if you live somewhere that gets warm. And especially if you have kids. I also know finding new ways to beat the heat is important, as is finding easy-to-grab snacks to keep the freezer stocked with.  

But most store-bought popsicles are full of artificial colors, high fructose corn syrup, added sugar, artificial flavors, as well as other artificial ingredients. Not to mention buying them isn’t really cost-effective, and honestly, they just don’t taste that good.

So naturally I set out to find a healthier tastier alternative. Something that would be easy to make at home, contain little to no sugar and still taste amazing. And I’m happy to say that’s exactly what I found in these homemade popsicles.

These popsicles contain nothing more than real mango, real pineapple, and kombucha. They couldn’t be easier to make, not to mention they make a great addition to popsicle rotation and are sure to be a bit with the whole family! But first, if you’ve never used kombucha to make popsicles, here’s what you need to know!

Does freezing Kombucha hurt it?

Most of us are familiar with the fermented beverage called kombucha and the many health benefits it can offer. Like most fermented foods, kombucha contains antioxidants and probiotics, also called live bacteria. That may boost the health of intestinal cells, and improve immune function and gut health. But do you lose these health benefits if you freeze kombucha?

The easy answer to this is no. There is some debate, however, about whether or not kombucha can be frozen, for how long, and what is the best way to do it.

Most people recommend flash freezing it, in order to keep the probiotics alive. Which of course isn’t necessarily possible when making popsicles.

So I can’t say for sure whether the probiotics will or will not survive the freezing process, or whether or not will revive in the stomach. But even if they don’t the beneficial acids and vitamins will, meaning these popsicles will still contain lots of healthy goodness!

I would recommend using organic kombucha for this recipe(you can also use your own kombucha if you make your own.) to ensure you get good healthy and real kombucha.

You can use any flavor you like in this recipe. But I would try to find either a mango, a pineapple, or a neutral-flavored kombucha to better blend with the other flavors.

How to make Pineapple Mango Kombucha Popsicles

ingredients.

  • frozen or fresh Mango chunks
  • fresh or frozen Pineapple chunks
  • Kombucha

Directions.

If you are using frozen fruit, I would take it out of the freezer and allow it to thaw slightly before making the popsicles. If you are using fresh fruit, peel and chopped the fruit into 1-2 inch pieces.

Place the fruit into an upright blending or food processor. Pour the kombucha in, put on the cover, and blend on a low speed until smooth. (if your mixture is too thick add more kombucha, or some pineapple juice to thin it out. I usually start with 1 cup of kombucha and go from there.)

Pour the mixture into your popsicle molds, put in the popsicle sticks, and place the mold in the freezer. Allow the popsicles to freeze for 6-8 hours or until frozen solid. (I like to make mine in the evening, then pull them out the next morning.)

NOTES

Kombucha expands as it freezes so be sure to leave a little extra room in your molds. Try to leave a 1/2-1 inch gap at the top of the mold.

If you prefer your popsicles to have more of a creamy texture. Add a little yogurt or some coconut milk to the mixture before freezing.

You can easily make a double batch of this recipe if you like and stock your freezer with these delicious popsicles to ensure you have plenty on hand when warm weather hits!

These healthy popsicles aren’t super sweet on account of the fact they are only sweetened with real fruit. If you find they aren’t quite sweet enough for your liking. Feel free to add a little sugar or sweetener of your choice. Real cane sugar, raw honey, and even maple syrup will all work well.

Storing popsicles + how to get them out of the mold

Getting your own popsicles out of the mold can often be tricky, and is honestly one of the hardest parts of making homemade popsicles. Thankfully I found, a quick, easy, and nearly fool-proof way to get popsicles out of the mold!

Fill a dish, or a sink, that is roughly the height of your mold, with warm water(warm NOT hot water). Gently place the mold in the water, be sure that the water doesn’t touch the popsicles themselves, just the mold. Allow the mold to sit in the water for 20-30 seconds, remove it from the water, gently wiggle the popsicles around, and pull them out.

I like to set mine on a baking sheet and put them back in the freezer. This allows them to freeze solid again, without sticking to each other. I let mine freeze for 20-30mins, then pull them out and move them to a freezer bag or container.

These Pineapple Mango Kombucha popsicles can be stored in a freezer bag or in an airtight container in the freezer for up to 3 months.
