Watermelon Kombucha Popsicle recipe

These easy 2-ingredient watermelon kombucha popsicles make the perfect sweet treat for any hot summer day! This healthy popsicle recipe is sure to be a hit, it’s sweet and refreshing plus packed full of vitamins and healthy goodness!

Over the years I’ve learned there are two times during the year when no one likes to talk about healthy eating, myself included. During the holidays and anytime it’s above 80 degrees outside. I especially don’t like to be bothered about healthy eating during the summer, yes I’m going to eat ice cream for supper, yes I know it’s the third time I’ve eaten it today, and no I don’t care.

But as I’ve slowly been learning to cook from scratch over the past few years, I’ve come across this fact, if you make it yourself, it’s pretty healthy.

I’ve been surprised(and surprised many others) with how healthy, homemade summer treats can be. I’ve also come to learn that though no one likes to talk about, healthy eating, or better eating as I like to call it. Real food, local food, made at home. Yet finding quick, easy, and better for you summer recipes is important.

I’ve also become almost hyper-aware in the past couple of years that many of our beloved summer treats from the grocery store, are awful for you, especially popsicles. Unless you want to pay an arm and leg for real fruit, naturally sweetened popsicles. You are left with popsicles that are full of artificial colors, high fructose corn syrup, added sugars, and more.

Not only did I not want to put loads of what into my body during the summer, but I also couldn’t justify paying so much for a healthy alternative that I could easily whip up at home in less than 10 minutes.

Why you should make Kombucha popsicles

There are many reasons you should make these amazing homemade popsicles, but I’ll just touch on my top 3.

  1. Homemade popsicles are so much better than anything you’ll find in the store. They are cheaper, better for you, and can easily be made in large batches to stock your freezer with.
  2. You can make these popsicles with any fresh fruit or frozen fruit you happen to have on hand. While this recipe may be for watermelon popsicles, you can make this recipe with any fruit you happen to have on hand, and any flavor of kombucha.
  3. They are good for you! Not only do these popsicles make a quick and easy homemade summer treat, but they are also full of healthy benefits! Kombucha contains antioxidants, probiotics, and vitamins. That may boost the health of intestinal cells, and improve immune function and gut health. And the best part is no one will ever know! Using a similarly flavored or plain kombucha means no one will even know it’s there. There is a great way to boost your kid’s immune system during the summer!

And speaking of kombucha, you might be wondering how does freezing kombucha affect it. Does freezing it kill all its good bacteria?

The easy answer to this is no. There is some debate, however, about whether or not kombucha can be frozen, for how long, and what is the best way to do it. And no one seems to be able to say 100% if and how freezing kombucha affects it. Or whether or not probiotics will or will not survive the freezing process, or whether will revive in the stomach. B

But even if they don’t the beneficial acids and vitamins will, meaning these popsicles will still contain lots of healthy goodness and help to support your immune system and overall health.

How to make Watermelon Kombucha Popsicles

ingredients

  • Fresh watermelon chunks, you can also use watermelon juice 
  • organic kombucha, I used watermelon kombucha, but you can use any flavor you like. You can also use homemade kombucha

Directions

Place the watermelon chunks and kombucha in an upright blender and blend on high speed until smooth.

Pour mixture into your popsicle molds, be sure to leave a little space at the top, 1/2-1 inch, as kombucha expands as it freezes.

Place a popsicle stick in each popsicle and place the mold in the freezer.

Freeze for 4-6 hours or until solid. I like to let mine freeze overnight.

Remove the popsicles from the mold and serve. Or transfer them to a freezer bag and return them to the freezer.

Notes

These popsicles can be stored in the freezer in a freezer bag or airtight container for up to 3 months.

If you prefer your popsicles to have a creamier texture, you can add some yogurt or full-fat coconut milk to your mixture before freezing. You can also add a little sugar, honey, or maple syrup if you don’t find these popsicles to be sweet enough for you.

These popsicles do tend to separate slightly as they freeze, especially if you are using fresh watermelon. This is normal and nothing to worry about. If the separating bothers you I would recommend adding some yogurt or coconut milk to help everything come together.

If you have trouble getting your popsicles out of the mold, try this method, it works like a charm every time! Fill a dish, or a sink, that is roughly the height of your mold, with warm water(warm NOT hot water). Gently place the mold in the water, be sure that the water doesn’t touch the popsicles themselves, just the mold. Allow the mold to sit in the water for 20-30 seconds, remove it from the water, gently wiggle the popsicles around and pull them out.
