World’s Easiest Cucumber Sandwiches | Tea sandwich recipe
These easy cucumber sandwiches are perfect for any occasion! With just 4 ingredients these fun and elegant finger sandwiches can be whipped up in little to no time, with almost zero prep work. Not to mention they can be made ahead of time or minutes before serving!
Cucumber sandwiches have long been considered an easy and quick staple for tea parties, they are super easy to make, require very little time, and even less prep work.
They can be tossed together last minute or made the day before your event, they are fun easy, and just about everyone loves them. Not to mention it’s pretty hard to beat classic cucumber tea sandwiches, and they will always be my go-to during time tea time!
Not only are these sandwiches perfect for your next tea time. But they are also perfect for your next baby shower, wedding shower bridal shower, Mother’s Day brunch, or garden party. These little sandwiches also make the perfect appetizer or even a light lunch!
But whenever you plan on having them, I can promise you two things. 1. that everyone will love them, and 2. that you won’t find any easier recipe than mine!
There seems to be a lot of debate about how to make the best, easiest, and most traditional cucumber sandwich. Everything from cream cheese and lemon juice to salt and rice vinegar, to white wine, Worcestershire sauce, and mayo.
And over the years I’ve played around with many different ways to make these sandwiches, and what I learn might surprise you. After years of playing around with recipes, I learned that the simpler the better, and well my recipe doesn’t get any simpler!
So be sure to give these classic and delicious sandwiches a try at your next afternoon tea or anytime!
How to Make Cucumber Sandwiches
Equipment.
- a sharp knife, you can also use a food processor or mandoline slicer depending on how thin you want your slices to be.
Ingredients.
- soft bread, sliced. You can any pretty much any kind of bread you like, traditionally these sandwiches are made with soft white bread, such as the white sandwich bread you find at your local grocery store. But you can also use wheat bread, rye bread, or even sourdough bread. I used this sourdough sandwich bread!
- Cucumbers peeled and thinly sliced. Again you can use pretty much any type of cucumber, Persian cucumbers, English cucumbers, or whatever you can find.
- Dill Weed, fresh dill will also work
- Sea salt
- Salted butter, softened
Directions
Take 2 slices of bread and lay them out on a plate.
Cover both slices with a layer of butter 1/8-1/4 inch thick.
Add several of the sliced cucumbers to one piece of bread. If you are using thicker slices like I did, 4-5 should be enough. If you using thinner slices, then you will likely need, 8-10, depending on their thickness and how thick you want the sandwiches to be.
Sprinkle with sea salt, and a generous amount of dill, roughly 1+ tsp. per sandwich. Place the other slice of bread on top, the butter touching the cucumbers and gently press it down so it sticks.
With a shape knife, cut the sandwich across at an angle, then turn and cut at an angle again with the opposite corners, creating 4 small triangles. You can also cut the sandwich into four small squares, whichever shape you prefer.
Repeat with the remaining bread slices, and enjoy!
Notes
Make-ahead tip: If you are planning on making these the day before serving I would recommend patting your cucumber slices dry with a few paper towels, to help get rid of any excess moisture. This will help keep the sandwiches from getting soggy. You can also do this if you find your cucumbers seem to have a lot of moisture.
You can also save time by slicing your cucumbers the day before, to help ensure you’ll have fresh and crisp cucumbers the next day, wrap the cucumber slices in a damp paper towel and place them in an airtight container. This should keep from fresh for up 5 days!
Any leftover cucumber sandwiches can be placed in an airtight container or wrapped tightly in plastic wrap and stored in the fridge for up to 2 days. However, it is best to eat these sandwiches within 24 hours of making them.
