Heirloom Tomato Pizza with Garlic Butter

This easy-to-make heirloom tomato pizza recipe is full of flavor and couldn’t be easier to make! Perfect for any at-home pizza nights, date night, or dinner party. This pizza is a summer staple, its thin crust topped with fresh tomatoes, fresh herbs, and cheese, makes it the perfect summer pizza!

I love pizza just as much as the next person, from the classics like cheese and pepperoni to the more adventurous, like walking taco pizza and Jalapeño Pineapple Pepperoni Pizza. But this recipe might just be my favorite, I guess I could call this recipe my version of Margherita pizza, only better!

The flavorful garlic butter, topped with fresh tomatoes, fresh basil, fresh mozzarella cheese, and feta, all on homemade fresh pizza dough. I mean pizza doesn’t get much better than this does it? Not in my opinion.

Not only is this pizza full of flavor and fun colors, but it is also a great and delicious way to make the most of summer’s bounty, Whether you are gardening a homesteader, or have a friend who is always growing things, or a friend who is also giving you heirloom plants, even though you kill them all. Or maybe like me, you just love going to your local farmers markets and always buy way too much.

Regardless of what group you fall into(maybe none of the above), this is seriously a great summer pizza recipe and I would highly recommend trying it a try, especially if you can get your hands on some fresh heirloom tomatoes!

What kind of pizza crust works best for heirloom tomato pizza?

I know there are technically no rules for what pizza crust to use for specific pizza recipes. But just like with pie, I feel crust plays a very important part in making a good pizza.

Some recipes should only ever be made on creaker thin crusts, while others need thick, very thick, bread-like crusts. For this recipe I like to use a crust that is somewhere in the middle, not super thin, but most defiantly not thick

In my opinion, sourdough pizza crust is the perfect choice! Not only is my homemade sourdough pizza crust super easy to make(and doesn’t need to rise overnight!), but it also happens to be the perfect combination of thick and thin. Plus I feel the sourdough adds a wonderful undertone that adds to the overall summer feel of this pizza.

But you can most defiantly use whatever crust you like. You can use homemade pizza dough or pizza dough/crust from your local grocery store. It can be thick, thin, or in the middle, you can even make this with a stuffed crust!

Whatever you chose to use for this pizza will still taste amazing! And is sure to be a hit whenever you make it, just to careful this pizza is so good you might just end up eating the whole thing yourself!

How to make Heirloom Tomato Pizza

Garlic butter

  • Salted butter
  • Garlic cloves, you can also use garlic powder
  • Parsley

Pizza

  • Sourdough pizza crust
  • Heirloom tomatoes of choice, you can use any size shape, and color!
  • Fresh mozzarella cheese
  • Feta cheese
  • Fresh basil or fresh herbs of choice
  • Sea salt

Directions

Preheat the oven to 475 degrees F.

Roll out your pizza crust on a lightly floured surface, then transfer it to a baking sheet lined with a piece of parchment paper, and set aside.

Slice and salt the tomatoes. I prefer thinner slices, or halved smaller tomatoes, but you can also use thick slices of heirloom tomatoes.

In a small saucepan melt the butter, once it is hot and bubbly add the garlic and parsley. Cook stirring continually until the garlic is soft and fragrant, 3-5 minutes. Remove the pan from the heat.

Assemble the pizza. Pour all of the garlic butter into the prepared pizza crust, and spread it out evenly with the back of a spoon. Top with slices of tomato, followed by the fresh mozzarella, feta, and finally the fresh basil.

Place the pizza in the oven and bake for 10-12 minutes or until the crust is golden brown and the cheese is melted and bubbly.

Switch your oven to broil and cook the pizza for 1-2 minutes or until the cheese is nicely browned.

Remove the pizza from the oven and allow it to cool for 10 minutes before slicing and serving.

Notes

Any leftover heirloom tomato pizza can be wrapped with plastic wrap or placed in an airtight container and put in the fridge for up 1-week.

If you can’t find any heirloom tomatoes free feel to use whatever you have on hand!

While Garlic butter is 100% my first choice for this pizza, you can also use pizza sauce, tomato sauce white sauce, basil pesto, or even just olive oil seasoned with salt and black pepper as your sauce.

Normally I serve this pizza as is, but it’s also great topped with fresh greens, salt, pepper, and red pepper flakes!

Personally, I don’t have a pizza stone, but if you do, feel free to use it for baking this recipe!

Ingredients
  

For the garlic butter

  • 4 tbsp salted butter
  • 3-5 garlic cloves minced
  • fresh or dry parsley to taste

For the pizza

  • 1 pizza crust homemade or store-bought I like to use my homemade sourdough pizza crust
  • 1-2 lbs heirloom tomatoes any size shape, or color
  • 8 oz fresh mozzarella cheese
  • 1 bunch fresh basil or fresh herbs of choice
  • feta cheese to taste
  • sea salt

Instructions
