I think it’s pretty safe to say we eat Mexican food at least twice a week around here, from basic bean and cheese burritos to crispy fish tacos with loads of fresh toppings. Mexican food, of any kind, will always be a hit around here. Honestly, I can’t think of anything my family eats more than tacos.
And while I do tend to fall back on the same old recipes time and time again, nothing makes an easier dinner than hard shells, shredded cheddar cheese, and well-seasoned taco meat.
Now and then I like to switch things up, and try out a new way of serving the classic, American-Mexican food we’ve all come to love and enjoy.
I guess one could say this is my take on Irish Nachos, I don’t know what it is about crispy fries but I can never seem to get enough of them, and lately, I’ve been feeling the need to turn everything I eat into a new loaded french fry recipe.
These loaded fries are super easy to make and combine all your favorite nacho and taco toppings to create a fun, easy, and slightly messy finger food that is perfect for busy weeknights, parties, football games, and more!
And the best part is that these homemade nacho fries take less than 30 minutes to make, and can easily be topped with whatever you have on hand! If you love tacos, nachos, or french fries, then this recipe is you, plus I promise the whole family is going to love it!

How to Make Loaded Nacho Fries
Place the cut potatoes, or premade french fries in a large bowl, drizzle roughly 2 tbsp of olive oil over them, then add half of the taco seasoning and toss to combine.
Spread in a single layer on a large baking sheet. If you are using premade. frozen fries, bake them according to the package directions. If you are making homemade fries, or potato wedges(I tend to opt for the potato wedges, as I feel they are easy to pick up). Bake them at 400 degrees F, for 15-20 minutes or until the outside is crisp and the inside is tender. You can also make your french fries in an air fryer or a deep fryer.
While the french fries are cooking, prepare your taco meat.
In a large skillet over medium heat brown the ground beef until it is completely cooked through. Drain off any excess grease and add the taco seasoning( be sure to mix the taco seasoning with water first according to the package or recipe directions.) Reduce the heat to low and continue to cook, stirring occasionally until you are ready to add to your fries.
In a small saucepan heat the refried beans with a little water, stirring often just until they are hot. Remove from the heat and set aside until ready to use.
Once the french fries are done, transfer them to a parchment-lined serving tray or baking sheet, be careful not to burn yourself as they will be hot!
Sprinkle the beef mixture over the fries, followed by the refried beans, and lots of cheese. Allow the fries to sit for 1-2 minutes or until the cheese melts. Add the lettuce and the remaining toppings + any extra toppings of choice and serve immediately.
Enjoy!
