The Best Chickpea Veggie Burger Recipe

​These homemade chickpea veggie burgers are delicious and super easy to make! Packed with flavor and simple fresh ingredients, this homemade veggie burger is perfect for any summer BBQ and is sure to be a hit with any crowd!

I’m not gonna lie veggie burgers aren’t something we eat very often around here, and honestly, I’m just not a burger kind of girl, I’d much rather eat a hotdog or brat.

But I can also say I’ve definitely found myself in need of vegetarian/vegan burger from time to eat. Plus it’s always great to have a meatless option at your summer BBQs and get-togethers!

And while there are plenty of both vegan and vegetarian burgers on the market these days, you’ll likely be able to find a few good options at your local grocery store. It’s super easy, not to mention way cheaper to make your own veggie burgers at home.

And there are plenty of different options to choose from, anything from black bean burgers to chickpea quinoa burgers and black bean quinoa burgers!

But of all the veggie burger recipes I’ve tried and made thus far I have to say these vegan chickpea burgers are my favorite! I’m not going to try and claim they taste like meat, or that you won’t even notice it’s a veggie burger, because let’s be honest while veggie burgers are great, they are a far cry from the burger patties most of us grew up eating.

But I will say that this might just become your new favorite veggie burger! This chickpea veggie burger is not only loaded with flavor and fresh vegetables, but they are also super easy to make, they don’t call for any odd ingredients like quick oats or a flax egg, they can be fried or baked, and they also store well, and can easily be prepped the day before.

Even if you aren’t vegan and don’t see any need to stop eating regular beef/hamburgers I would still highly suggest giving this recipe a try! Not only is flavorful, but it’s also a new way to switch up the usual cookout menu, and offers a lighter option for hot summer days!

Best chickpea veggie burger Recipe

Ingredients

  • canned chickpeas(also called garbanzo beans), drained and rinsed 
  • fresh garlic
  • carrot, peeled and shredded
  • green onions, sliced
  • olive oil + oil for frying, I usually fry mine in avocado oil
  • sea salt
  • white pepper, you can also use black pepper
  • dried parsley
  • all-purpose flour, you can also use chickpea flour, oat flour, or gluten-free flour
  • Hamburger buns,  for serving 
  • ​your favorite hamburger toppings, or any from the list below!

How to make Chickpea Veggie Burgers

Place the chickpeas, shredded carrot, sliced green onion, and seasoning in a food processor, add a drizzle of olive oil, and blend, just until mixed. You should have a wet and slightly sticky mixture​and the chickpeas should be almost completely blended. If you are having trouble blending the mixture, add a splash of water.

Transfer the mixture to a large bowl, and set aside.

​In a large skillet over medium heat(I like to use my cast iron skillet), heat 3-4 tbsp oil of choice, until hot and crackling.

Place 1 cup of all-purpose flour on a large plate, place a large spoonful of the chickpea mixture on the flour, using your hands gently coat the scoop/ball with flour, then pick it up and form it into a patty in your hand.

Carefully place the finished chickpea patty in the hot oil. Repeat with the remaining chickpea mixture. I usually do this in 2 batches (I make 6-8 burgers, depending on how big I want them to be). I make 3 patties as quickly as I can, cook them completely, then make another 3.

Cook the patties until they are golden brown and slightly crispy on both sides, and heated through, about 5-10 minutes, place the cooked patties on a paper towel-lined plate, and allow them to cool slightly before serving.

Serve these veggie burgers on a toasted bun with any of your favorite toppings, and a side of potato salad, or sweet potato fries! You can also serve them with white or brown rice, mashed potatoes, or a cold quinoa salad!

Recipe Notes

Any leftover veggie burgers can be stored in an airtight container for up to 5 days! You can also easily prep these burgers the day before you are planning to serve them. Simply pop them in the oven, or heat them in a lightly oiled skillet until hot when ready to serve!

If you would prefer to bake these burgers, simply place the finished patties on a parchment paper-lined baking sheet, place them in a preheated 400-degree F. oven, and bake for 15 minutes, flipping halfway through. Or until they are golden brown and heated through. I would still recommend brushing them with oil before baking though, to help them brown.

If your chickpea mixture becomes too thin or sticky(this can easily happen if you add too much water!) simply transfer the mixture to a large bowl, add 1/4-1/2 cup of flour, and mix well. Add more flour if needed until the mixture thickens enough for you to handle. Then prepare as usual!
