Bacon Onion Hot Dog Topping Recipe | with cheddar cheese

This super-easy and delicious bacon onion hot dog topping is a show-stopper recipe that is sure to be a hit with everyone! Featuring crispy bacon, caramelized onions, and melty cheddar cheese, this bacon onion topping is a great way to step up your hot dog game and put a new, yummy twist on a summer classic.

I love a good hot dog as much as the next person. I mean, are you even really American if you don’t?

And if you ever catch me at a baseball game, just be warned, I will eat more hot dogs than a person needs to, and they will all be completely plain, because I refuse to miss any of the game. 

But to be fair, I love hot dog toppings even more than I love hot dogs, and while I’ll always be a fan of classic hot dog toppings, ketchup, mustard, onions, etc.

More often than not, I put more unusual things on my hot dogs. Coleslaw, tomato slices, chips, hot sauce, pretty much you name it, and I’ve probably put it on a hot dog at one point or another. 

But since I already have a poutine hot dog recipe on the blog, I probably didn’t need to explain that I like odd hot dog toppings.

Out of all of the hot dog toppings I’ve ever had, though, this bacon onion topping is hands down the best one yet, and possibly the best one ever.

This recipe was inspired by Mexican hot dogs, I saw once. At least the person who made them said they were Mexican; I can’t say for certain.

Either way, I thought the hot dogs looked pretty darn delicious, and so I decided to try making my own version at home.

And man, were they good. This bacon onion topping was a huge hit with my own family, and something I’ll be making again for the 4th of July, summer get-togethers, and just because.

This hot dog topping is easy to make, super yummy, and a great change of pace from regular hot dogs. And can easily be prepped ahead of time!

How To Make Bacon Onion Hot Dog Topping 

Ingredients

  • Bacon, I used smoked peppercorn bacon for the best flavor I could create, but any type of bacon will work. Just keep in mind you may need to season your topping with salt & pepper.
  • roma tomatoes, diced
  • white or yellow onion, diced
  • pickled jalapenos, roughly chopped
  • yellow mustard
  • ketchup 
  • shredded cheddar cheese

For serving

  • hot dogs, I like to use all-beef hot dogs, but feel free to use your favorite kind!
  • hot dog buns. I highly recommend toasting your hot dog buns for this recipe. (just be careful not to burn them, like I always do!) But feel free to skip it.

Directions

Cut your bacon into small pieces and place it in a large skillet (I like to use a cast-iron skillet). Cook the bacon over medium heat, stirring often, until the bacon is golden brown and crispy. Then transfer the bacon to a paper towel-lined plate and set aside. 

Drain most of the bacon grease out of the pan, leaving roughly 2 tbsp still in the pan. Discard the remaining bacon grease or save it for later use. 

Add the chopped onions and tomatoes to the bacon grease, and cook, stirring often, until the tomatoes have broken down and the onions have started to caramelize. Reduce the heat, and continue cooking until most of the liquid from the tomatoes has evaporated.

Then add the ketchup, yellow mustard, and chopped pickled jalapenos, stir to combine, and cook until the mixture is heated through. Add the bacon back to the pan and mix well. Taste, and season with salt and pepper if needed. 

Finally, add the shredded cheddar cheese, and mix just until the cheese is melted, then remove the pan from the heat.

Now, at this point, you can allow the bacon mixture to cool to room temperature. Then transfer it to an airtight container and place it in the fridge until ready to use.

OR you can serve your bacon, onion hot dog topping immediately. To serve, place your hot dogs on choice into your prepared hot dog buns and top each one with a generous amount of your bacon onion topping. This recipe will make enough topping for 6-8 hot dogs.

Recipe Notes

Any leftover hot dog topping can be stored in an airtight container in the fridge for up to 3 days. And as mentioned above, you can easily prep this hot dog topping ahead of time, and simply reheat it on the stovetop when ready to serve. 

I love using a good, sharp cheddar cheese for this recipe. But you can also use regular cheddar, colby, or montray jack cheese!

I also love serving these hot dogs along with all my favorite BBQ sides, coleslaw, potato salad, and pork n beans. But they are also delicious with a salad, soup, or just on their own!
