Pasta is one of my favorite things in the world, and there is nothing I love more than a good homemade sauce. Especially if that homemade pasta sauce happens to be a white wine butter sauce.

I love pasta dishes, hot dishes, and cold dishes, basically if it has noodles, and happens to be covered in a flavor-packed slurpable sauce, then I’m practically in heaven.

Honestly, I could probably write a whole post about how much I love pasta and another one about how much I love creamy sauces. But that’s not what you came here for is it?

What is the best kind of wine to use? My favorite white wines

Before I get into it, I’ll just cut to the chase, you can use any of your favorite white wines for this recipe. And if you aren’t a wine drinker and are planning on using your bottle of wine just for cooking. Feel free to pick up any cheap bottle of wine at your local grocery store.

But for those who are more interested in the best kinds of wine to use. Or are looking for a white wine that will be good for drinking along with the finished pasta, let me break it down a little.

For starters don’t use a sweet wine, I love a good sweet white wine, but they don’t have any place in most recipes unless it’s a dessert recipe. For most, if not all savory dishes I would recommend using a crisp dry white wine.

My favorite white wines to use are Pinot Grigio and Sauvignon Blanc, but you can also use a Unoaked Chardonnay or even a dry sherry. I find these wines not only blend beautifully with most pasta dishes, but they are also great with chicken, pork, and seafood. Plus they are very drinkable(save the sherry), and can easily be found at most local shops for less than $20!

If you are in a pinch though, you can also use cooking wine in this recipe. Most grocery stores carry dry white cooking wine.

Again you can use any of your favorite types of white wine for this recipe, and so long as you steer clear of sweet wines, you should be good!

How to Make Creamy White Wine Pasta Sauce

In a large saucepan over medium heat, melt the butter until bubbly. Add the onion and garlic and saute, until translucent and fragrant, about 3 minutes.

Add the tomatoes and cook, stirring often until they are soft and slightly broken down. While the Tomatoes are cooking, mix the heavy cream and cornstarch in a small bowl. And set aside.

Add the Italian seasoning, to the tomatoes then add the salt to taste and stir to combine.

Add the heavy cream mixture, and the white wine, and whisk together. Bring the sauce to a gentle simmer and continue to whisk until it starts to thicken, add the parmesan cheese and whisk until melted. Reduce the heat and stir often while your pasta cooks.

Heat a large pot of water over medium-high heat. Add a generous pinch of salt and a drizzle of olive oil to the water. Bring the water to a rapid boil and add your pasta, cook to al dente, according to the package instructions.

Drain(be sure to save a cup of the pasta water) and add the cooked pasta to your prepared sauce.

Remove the sauce from the heat and toss the pasta to make sure it is completely coated in the sauce. If your sauce is too thick, add some of the reserved pasta water to thin it out.

Serve immediately with a sprinkle of cheese, a glass of white wine, and some crusty bread.

Enjoy!

Recipe Notes

This pasta is also great served with a squeeze of fresh lemon juice, a sprinkle of fresh cracked black pepper, fresh lemon zest, or some crushed red pepper flakes!

Any leftover pasta can be stored in an airtight container in the fridge for up to 3 days! Reheat any leftovers over low heat with a splash of wine or heavy cream, to help prevent sticking, stir often until heated through.

If you are looking for a non-alcoholic option for this recipe, you can replace the white wine in the recipe with chicken stock, or pasta water!
