Salads are one of my go-to meals during the summer, not only are they light and refreshing, perfect for hot days. But they are also easy to toss together and can made with whatever I happen to have one hand.

There are a lot of seasonal salads I enjoy during the summer, but out of all of them, I think this strawberry spinach salad recipe might just be my favorite!

Not only does it perfectly capture the taste of summer, but it’s also packed full of flavor, it makes a great side dish or main dish. It’s perfect for lunch or supper, and can easily be packed for a quick lunch on the go! Plus it’s a great way to use up fresh strawberries!

This easy salad recipe is actually a copycat recipe of sorts, inspired first by one of our local fast food chains and their strawberry fields salad.

And second by a quick and easy seasonal salad that is served from June through August at a local coffee shop I used to work at.

I combined these two easy and delicious salads and made my own poppyseed dressing for it, so now I can enjoy this strawberry salad any time of year! Plus it’s a lot cheaper than eating out all the time!
