If you’re planning to use roasted sweet potato as one of your pizza toppings, prep your sweet potato and get it cooked before starting on the rest of the pizza.
Preheat your oven to 400 degrees F.
In a large bowl, combine the ground chicken, egg, parmesan cheese, garlic powder, and dried oregano. Mix well.
Line a large baking sheet or pizza pan with parchment paper.
Then place the chicken mixture onto the prepared baking sheet, and using your hands, shape your crust(you can wear gloves for this step if you like). Shape the chicken mixture into a circle or square roughly 10 inchs in size and roughly 1/4 of an inch thick.
Place your crust into the oven and bake for 20-25 minutes or until the chicken is cooked through and the edges of the crust are a light golden brown.
Remove the crust from the oven and allow it to cool momentarily before topping.
Drizzle the BBQ sauce over the top of the pizza crust and spread it out as evenly as possible over the whole crust with the back of a spoon.
Then top your pizza with the diced tomato and red onion, followed by the roasted sweet potato.
Finally, sprinkle the shredded cheddar cheese over the top, and return the pizza to the oven.
Bake for 12-15 minutes or until the cheese is melted and the sauce is bubbly.
At this point, I always like to switch my oven to broil and broil my pizza for 1-2 minutes or until the melted cheese is golden brown on top. But you can easily skip this step.
Remove the pizza from the oven and allow it to cool for 5-10 minutes before cutting and serving.
