Ingredients

  • 2 heads crisp romaine lettuce washed and chopped into bite-sized pieces. You can also use iceberg lettuce, kale, or mixed greens for this recipe!
  • 1 1/2-2 cups chopped crispy chicken
  • 1/3 cup grated parmesan cheese
  • croutons  homemade or store-bought
  • 1/3-1/2 cup Caesar dressing you can use store-bought or homemade dressing
  • 4 large tortillas I like to use soft large flour tortillas for this recipe. But you can also use whole wheat tortillas or your favorite Spinach wraps!

Instructions

  • In a large bowl, combine the chopped lettuce, parmesan cheese, croutons, and cut chicken.
  • Pour about half of the dressing over the top of the lettuce mixture, and toss with your hands until everything is completely coated in the dressing.
  • Add more dressing and toss to combine until you reach your desired amount of dressing. I like a lot of dressing on my salads, but I only used about half a batch of my homemade Caesar dressing for these wraps. So be sure to add only a little dressing at a time.
  • Before assembling your wraps, be sure that your tortillas are soft enough to roll. If you are using room-temperature tortillas you should be good to go! But if you feel your tortillas are a little stiff, or you just pulled them out of the fridge I would highly recommend warming them up in a hot oven(or a microwave) for about 20 seconds before assembling and rolling your wraps.
  • Place your tortillas on a flat surface and divide the salad mixture evenly between them. Try to keep the salad mixture all in a pile, roughly in the center of the tortilla.
  • Take the first tortilla/wrap and fold one half of the tortilla over the filling, gently pull the filling back, then fold in the sides of the tortilla, and roll it up tightly. Repeat with the remaining tortillas/wraps.
  • Cut each wrap in half at an angle, and serve with a side of potato chips or french fries. Or on its own.
  • Enjoy!

Notes

Chicken Ceasar wraps can be stored in an airtight container, or tightly wrapped in plastic wrap in the fridge for up to 3 days! Just be sure to keep in mind your coutrons will get soggier the longer your wraps are stored.
I love using my oven-fried chicken in these wraps, but you can use any kind of boneless chicken you like! Grilled or shredded chicken breasts, chicken strips, and chicken tenders, all work well. You can also use rotisserie chicken or any leftover chicken you happen to have in the fridge!
You can also turn this recipe into a grilled chicken Caesar wrap! Simply heat a small amount of butter in a large skillet, and fry the wrap over medium heat until both sides are golden brown.
Be sure to use large burrito-size tortillas for making these wraps! The bigger and thiner the tortillas or wraps you can find the easier it will be to make this recipe! I used the largest size tortillas I could find at my local grocery store.
Sometimes having whole croutons in your wrap seems like a little much. If you looking for an easy alternative way to add some crunch to these wraps I would highly recommend toasted panko breadcrumbs!
