Ingredients

for the latte

  • 1/2 cup whole milk you can also use 1%, 2%, skim milk, or your favorite non-dairy milk! Oat milk, coconut milk, soy milk, cashew milk, and almond milk all work well!
  • 1/4 cup heavy cream OR more milk of choice
  • 3 tbsp store-bought or homemade pumpkin puree be sure to use pure pumpkin puree, not pumpkin pie filling!
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp  pumpkin pie spice homemade or store-bought
  • 1 tbsp instant coffee + 3 tbsp hot water OR fresh espresso shots OR strong brewed coffee

toppings - optional

  • whipped cream
  • ground nutmeg

Instructions

  • In a small saucepan, combine the milk, heavy cream, pumpkin puree, maple syrup, vanilla extract, and pumpkin pie spice.
  • Heat over medium heat, whisking often until the milk is hot and small bubbles appear around the edge of the pan.
  • While the milk is heating, prepare your coffee. Combine the instant coffee with the hot water and stir until the coffee is completely dissolved. If you have an espresso machine you can use 2 shots of espresso in place of the instant coffee. OR you can use 1/4 cup of hot strong brewed coffee!
  • Pour the hot coffee into the milk mixture and whisk until combined. Pour the hot latte into a large mug, and top with whipped cream and a dusting of ground nutmeg.
  • Enjoy!

Notes

Feel free to double or triple this recipe to make 2-4 lattes! I don’t recommend making too large a batch of this as the ingredients will start to separate if the latte is left to sit too long. But you can easily make 2 or 4 or 6 at a time to enjoy with friends!
To make homemade whipped cream, simply combine, 1 cup heavy cream, 2 tbsp powdered sugar, and 3 tsp vanilla extract in a large bowl. Beat using an electric mixer at high speed until stiff peaks form. Enjoy!
If you like you can easily turn this recipe into an iced pumpkin spice latte! Simply prepare the milk and coffee as instructed above. Then fill a large glass to the top with ice, pour in the coffee, followed by the pumpkin milk mixture. Stir, and top with whipped cream and ground nutmeg. Enjoy!
Feel free to use sugar, honey, or any sweetener of choice in place of the maple syrup in this recipe!
