Pineapple Rum Cocktail
- 2.5 oz rum I like to use pineapple rum or coconut rum for this recipe, but you can also use light rum or white rum. Pretty much any type of rum will work for this recipe, though I wouldn’t recommend using a dark rum or aged rum.
- 0.5 oz grenadine syrup
- 2 oz pineapple juice You can use premade or fresh pineapple juice for this recipe, just be sure it’s 100% pineapple juice.
- 0.5 oz fresh lime juice
- ice cubes
- pineapple chucks, for garnish You can also garnish this cocktail with maraschino cherries, pineapple wedges, pineapple slices, or lime wedges.
Mocktail Version
- 0.5 oz grenadine syrup
- 4 oz pineapple juice You can use premade or fresh pineapple juice for this recipe, just be sure it’s 100% pineapple juice.
- 0.5 fresh lime juice
- 1 oz coconut water optional, but adds extra flavor!
- ice cubes
- pineapple chucks, for garnish You can also garnish this cocktail with maraschino cherries, pineapple wedges, pineapple slices, orange slices, or lime wedges.
Mocktail
Fill a glass of choice with ice.
Pour the grenadine syrup, pineapple juice, and coconut water, if using, over the ice, followed by the lime juice. Give it a quick stir, garnish, and serve immediately. Enjoy!
If I’m making this drink for kids, I like to serve it with a drink umbrella, for some extra fun!
I like to serve this cocktail as is, but feel free to add a splash of club soda, ginger ale, or your favorite lemon-lime soda! You can even add a splash of coconut water for an extra tropical kick
If you like your cocktails to be extra sweet, feel free to add extra grenadine syrup or some simple syrup.
