Poutine Hot Dogs

- 8 gourmet hot dog buns I used brioche buns, but feel free to use whatever buns you like best, or even make your own!
- 8 all-beef hot dogs
- 12 oz of white cheddar cheese curds
- 1 lb french fries I used seasoned fries, but you can use whatever kind you like best
- 2 cups beef gravy homemade or store-bought. You can also use brown gravy or the more traditional poutine gravy, which is a blend of brown gravy and chicken stock.
Bake your French fries according to the package instructions until hot and crispy. Set aside until ready to use.
While your fries are cooking, heat your gravy in a small saucepan over medium heat until hot.
Next, prep your hot dogs. I like to broil mine in the oven until they’re heated through and slightly browned. But you can also grill your hot dogs, make them in the air fryer, or even boil them.
Once all your hot dog ingredients are ready, place the hot dogs in the buns, then top them with fries and cheese curds. Be sure to prep these hot dogs on individual serving plates, and be generous with the toppings—they’re meant to be messy!
Finally, drizzle a generous spoonful of gravy over the top of each hot dog and serve immediately.

I don’t find that these hot dogs keep very well as leftovers because of the gravy—no one wants a soggy bun! I highly recommend topping them as you serve them or letting everyone top their own.
You can, of course, store any separate leftovers (fries that haven’t been used or extra plain hot dogs) in the fridge for up to 3 days.
