Boozy Pina Colada Popsicle Recipe

Popsicles have been a classic summer treat for ages now, they are quick, simple, relatively mess-free, and can easily be made in any of your favorite summertime flavors.

Really it’s no surprise to me that I see popsicles at almost every summertime event. From cookouts to dinner parties, the 4th of July, and pretty much everything in between.

These quick and easy boozy popsicles put a fun new twist on this classic summertime dessert, and give adults the chance to enjoy popsicles just as much as the kids do!

This 21+-only pina colada popsicle recipe is packed full of pineapple and coconut flavor, with a hint of orange and just the right amount of rum. They make the perfect sweet treat for girl’s night, boy’s night, cookouts BBQs, and all your summer get-togethers. Just be sure to keep them out of kids’ reach, and label them clearly so there are no mix-ups! 

I have also included a quick and simple alcohol-free version of these popsicles too, so they can easily be made safe for everyone to enjoy!

How to make Boozy pina colada popsicles

Equipment

Ingredients

  • canned pineapple chunks, you can also use fresh pineapple or frozen pineapple 
  • orange juice, you can also use pineapple juice
  • coconut milk
  • coconut rum. You can also use white rum or silver rum, just don’t use a spiced or dark rum for this recipe!
  • Honey or simple syrup
  • coconut flakes

Directions

In your upright blender combine the pineapple chunks, coconut milk, and orange juice, and blend on high speed until smooth, and creamy. Add the rum and honey and blend to combine, taste, and adjust the sweetener if needed.

​Pour the pineapple mixture into your popsicle molds leaving roughly 1/2 gap at the top. Place a popsicle stick in each mold, be sure to push it down all the way to ensure that it is touching the bottom of the mold.

I usually don’t add the coconut flakes until I have removed the popsicles from the mold, but you can sprinkle some on top of the popsicles before freezing them in if you like!

Place the finished popsicles in the freezer and allow them to freeze for 4-6 hours or overnight before removing them from the mold. 

Once the popsicles have been removed from the mold, I like to place them on a parchment paper-lined baking sheet and sprinkle coconut flakes over the top. Then return them to the freezer for 15 minutes. This allows the popsicles to freeze solid again and helps prevent them from sticking to each other. Plus I feel the coconut flakes add a nice touch to these popsicles.

Recipe Notes

These pina colada popsicles can be stored in a freezer bag or freezer-safe airtight container and frozen for up to 3 months!

If you would like your popsicles to be extra creamy, try adding a little coconut cream or vanilla ice cream to the pineapple mixture!

Here is my quick and easy way to get homemade popsicles out of the mold!

Fill a dish, or a sink, that is roughly the height of your mold, with warm water(warm NOT hot water). Gently place the mold in the water, be sure that the water doesn’t touch the popsicles themselves, just the mold. Allow the mold to sit in the water for 20-30 seconds. Remove it from the water, gently wiggle the popsicles around, and pull them out.

Again I like to place mine on a baking sheet and put them back in the freezer. This allows them to freeze solid again, without sticking to each other!
