Strawberry Piña Colada Recipe
This easy strawberry pina colada recipe is the perfect summer cocktail. With the delicious blend of sweet strawberries and refreshing coconut, this cocktail is perfect for any summer party or get-together. This recipe adds a fun twist to the traditional pina colada, and as always, I’ve included a just-as-delicious mocktail version!

To be completely honest, I don’t have a whole lot to say about this recipe, mostly I guess because unlike a lot of the recipes I share here.
I don’t have a story for this one, or even a reason for making it. I just sort of saw an idea, decided to give it a try, added a couple of twists. And that’s about all there is to say about these delicious strawberry piña coladas.
I don’t even like pina coladas very much, really, I can’t think of a single reason I decided to make this recipe. All I can say is that this recipe is super yummy and might just be the perfect summer cocktail.

The blend of sweet fresh strawberries, pineapple juice, with the tropical flair of coconut creates a fun and fruity cocktail that is the perfect combination of all my favorite summer flavors.
With just a little prep work and a blender, these strawberry pina coladas can easily be made to serve one, two, or a group. They are perfect for summer get-togethers, dinner parties, Mother’s Day, and more. And as always, I’ve included a just-as-yummy mocktail version so everyone can enjoy this recipe!

How To Make A Strawberry Pina Colada

Ingredients
- white rum, you can also use silver rum or coconut rum
- strawberries, chopped. I like to use fresh strawberries, but you can also use frozen strawberries to create a thicker drink!
- lime juice
- simple syrup, I like to use my homemade simple syrup
- coconut cream, also called cream of coconut.
- pineapple juice
- ice
- fresh pineapple chunks, and/or fresh strawberries, for garnish

Directions
In a blender, combine the chopped strawberries, lime juice, simple syrup, and 1 oz of the rum, add a handful of ice, and blend until smooth. Adding more ice if needed until you reach your desired consistency.
Pour into two cocktail glasses of choice, doing your best to evenly divide the mixture between the two glasses.
Rinse out your blender, then add the coconut cream, pineapple juice, and remaining 1 oz of rum to the blender and pulse just until combined.
Carefully pour the coconut mixture on top of the strawberry mixture, again, doing your best to evenly divide the mixture between both glasses (the thicker your strawberry mixture is, the more divided your layers will stay. I prefer to mix mine instead of layering them, but the layers are fun and pretty, especially when serving this drink at parties!)
Granish with a chunk of pineapple, and/or a piece of fresh strawberry.
Serve immediately and enjoy!

Recipe Notes
To make a mocktail version of these strawberry pina coladas, simply omit the rum, make according to the directions above, and enjoy!
If you are in a pinch, you can use coconut milk in place of the coconut cream, but the mixture won’t be as thick.
