This cocktail recipe came about mostly because I was bored one Friday night. I enjoy sharing cocktail recipes, and I always love making cocktails, but I’m really not much of a drinker, and I don’t spend much of my free time drinking cocktails.

But I happened to be rather bored one Friday, it was the dead of summer, it had been hot and humid all day, and I just so happened to have a random bottle of blue curacao in the house.

I didn’t have much of an idea to go on, and flipping through the few cocktail books I have didn’t help much. Especially since I didn’t have the right ingredients to make anything. So I decided to do what I usually do when I cook, grab what I have, and wing it.

Which in this case happened to a cocktail shaker and a glass of shaved ice. It wasn’t much to work with, but somehow this drink came out of it.  This cocktail seriously tastes like a tropical paradise!

Pineapple, coconut, and rum blend perfectly to create the ultimate summer drink. While its fun blue color and shaved ice make this cocktail look like a winter wonderland, hence the name Tropical Freeze.

I like to think of this cocktail as the perfect blend of tropical flavors and summer fun, and not only does it taste amazing, but it’s also super easy to make! This blue cocktail is perfect for the 4th of July, Father’s Day, Mother’s Day, BBQs, pool parties, or any hot summer day!

How To Make A Tropical Freeze Cocktail

Equipment

  • cocktail shaker
  • cocktail glass, for serving

Ingredients

  • Coconut rum, you can also use light rum or white rum for this recipe. Pretty much any type of rum will work, even mango rum, though I wouldn’t recommend using a spiced rum or a dark rum.
  • blue curacao
  • pineapple juice, you can use fresh or premade juice, just be sure it’s 100% pineapple juice.
  • full-fat coconut milk.
  • ice cubes, for mixing
  • shaved ice, for serving
  • pineapple chunks for garnish

Directions

Fill a cocktail glass of choice with shaved ice and set aside.

Place the ice cubes and the remaining cocktail ingredients in a cocktail shaker. Cover and shake vigorously for about 15 seconds, or until the coconut milk is completely combined.

Pour over your shaved ice, garnish, and serve immediately.

Enjoy!

Recipe Notes

You can also garnish this cocktail with a drink umbrella or a piece of coconut!

If this cocktail isn’t sweet enough for you, feel free to add some simple syrup to taste.

I don’t have a mocktail version of this exact recipe, as I haven’t found a good replacement for blue curacao yet. But you can easily combine one part pineapple juice with one part coconut milk in a blender, add a handful full ice and a few drops of blue food coloring to create a fun and delicious frozen drink that everyone can enjoy!
