- 1 oz coconut rum you can also use light rum or white rum for this recipe. Pretty much any type of rum will work, even mango rum, though I wouldn’t recommend using a spiced rum or a dark rum.
- 1 oz blue curacao
- 2 oz pineapple juice you can use fresh or premade juice, just be sure it’s 100% pineapple juice.
- 1 oz full-fat coconut milk
- ice cubes for mixing
- shaved ice for serving
- pineapple chunks for garnish
Fill a cocktail glass of choice with shaved ice and set aside.
Place the ice cubes and the remaining cocktail ingredients in a cocktail shaker. Cover and shake vigorously for about 15 seconds, or until the coconut milk is completely combined.
Pour over your shaved ice, garnish, and serve immediately.
Enjoy!
You can also garnish this cocktail with a drink umbrella or a piece of coconut!
If this cocktail isn’t sweet enough for you, feel free to add some simple syrup to taste.
I don’t have a mocktail version of this exact recipe, as I haven’t found a good replacement for blue curacao yet. But you can easily combine one part pineapple juice with one part coconut milk in a blender, add a handful full ice and a few drops of blue food coloring to create a fun and delicious frozen drink that everyone can enjoy!
