Thai Pizza Recipe | with chicken and sweet chili sauce

This homemade Thai pizza recipe is perfect for pizza nights, movie nights, game days, and more! A crispy homemade pizza crust topped with sweet chili sauce, diced chicken, and melty cheese creates the perfect combination of sweet and spicy and is sure to be a hit!

Over the years one of my family’s favorite places to get food from has been Papa Murphy’s. I don’t know if take-and-bake pizza really counts as take-out food. But I know it was a treat we never passed up and a supper idea that still gets most of us excited. 

I think it’s pretty safe to say we’ve eaten nearly every pizza off their menu throughout the years. But like any restaurant or takeout spot, we will forever have a soft spot for our favorite few items. 

It didn’t seem to matter who wanted pizza or why we were going, there always almost always going to be a stuffed chicken bacon reach pizza, and a thin crust Thai pizza among the order.

I’m not sure who first decided to order it, or why, but we instantly fell in love with their delicious spicy Thai chicken pizza. And it just so happens to be the only spicy food my mum can actually eat. 

Over the years we’ve moved and are no longer anywhere near a Papa Murphy’s, and since I already make most of our favorite pizzas at home. I decided it was high time I tried creating my own Thai chicken pizza recipe!

And this easy copycat recipe just so happened to come out amazing, and tastes almost exactly like, if not better than the take-and-bake pizza we were used to eating!

This easy homemade version perfectly blends Thai flavors with a crispy crust and melty cheese to create the best easy Thai chicken pizza that is sure to find its way to anyone’s weekly pizza night!

Homemade Thai Pizza with chicken and sweet chili sauce 

Ingredients

  • pizza crust, I love to use my homemade sourdough pizza crust for this recipe, because it’s perfectly thin and crispy. But you can use any kind of homemade crust, store-bought pizza crust, or pre-made dough that you like. 
  • Thai sweet chili sauce
  • thinly sliced zucchini. I like to leave the peels on, but you can feel free to peel your zucchini if you prefer. 
  • shredded cheddar cheese
  • shredded mozzarella cheese
  • diced red onion
  • diced chicken. I like to use baked or grilled chicken breast for this recipe, but any kind of chicken will work! Even rotisserie chicken, or any kind of leftover chicken you happen to have on hand!
  • green onions, sliced
  • crushed red pepper flakes

How To Make Homemade Thai Pizza

Prepare your pizza crust(if you are using premade pizza dough you may need to let it warm up to room temperature before prepping) and preheat your oven according to the recipe instructions. The temperature and bake time below are based on my sourdough pizza crust recipe.

Preheat the oven to 450 degrees F. Roll out your crust and place it on a parchment paper lined baking sheet(if you don’t have any parchment paper on hand, you can grease your baking sheet with olive oil)  

In a small bowl toss together your shredded cheddar and mozzarella cheese. Set aside until ready to use.

Using the back of a spoon or a rubber spatula spread the sweet chili sauce over your pizza crust, leaving roughly 1/4 inch gap around the edges of the crust. 

Sprinkle your mixed cheese over the top of the chili sauce, doing your best to keep it evenly spread out. Layer the sliced zucchini over the cheese, followed by the diced chicken and red onion.

Sprinkle the sliced green onions over the top of the pizza followed by a light dusting of crushed red pepper flakes. 

Place the pizza in your preheated oven and bake for 10-15 minutes. Or until the cheese is melted and bubbly and the crust is golden brown and crisp around the edges. 

Remove the pizza from the oven and allow it to cool for 5 minutes before cutting and serving.

Recipe Notes

Any leftover pizza can be wrapped tightly in plastic wrap or placed in an airtight container and stored in the fridge for up to 5 days! To reheat your pizza, place it on a baking sheet and heat at 350 degrees F for 8-10 minutes or until hot. 

You can also serve this pizza with a drizzle of sesame oil or spicy peanut sauce!

I haven’t had any trouble finding Thai sweet chili sauce at my local grocery store, but if you having a hard time finding some you can order it online –HERE. Or even make your own!
