Cajun Chicken Sandwiches

Juicy fried chicken, topped with fresh lettuce, crispy bacon, and spicy Cajun aioli, this delicious recipe is perfect for busy weeknights, dinner parties, get-togethers, and more!

Ingredients
  

  • 4 buns I used brioche buns, but you can use any kind of bun you like! You can even sub your favorite bread in place of the buns! 
  • 4 tbsp melted butter
  • 4 pieces fried chicken you can also use grilled chicken for this recipe
  • 1/2 head Romain lettuce washed and roughly chopped
  • 8 pieces crispy bacon 4 pieces per sandwich
  • Cajun Aioli or Cajun Mayo

Additional topping ideas

  • red onion
  • tomatoes
  • cheese, cheddar cheese, and Monterey Jack cheese are both great options!  
  •  pickles

Instructions
 

  • Cook your chicken. I used my oven-fried chicken recipe for these sandwiches, but you can use any fried chicken recipe you like, or use premade fried chicken patties! 
  • In a large skillet cook your bacon until nicely browned and crispy. Remove the bacon from the pan and set aside until ready to use.
  • Heat a skillet over medium heat, using the melted butter, butter both halves of all four buns, then place one half of a bun into the hot skillet, and toast until golden brown.
  • Remove the half of bun from the skillet, and repeat with the remaining buns. (follow the same steps if you are using bread instead of buns!)
  • Once all the buns are toasted, and your chicken is cooked(if you are working with raw chicken be sure it has reached an internal temperature of 165 degrees F) it’s time to assemble the sandwiches. 
  • Spread a generous amount of Cajun aioli on the bottom buns, then place one piece of chicken on each bun. Place the bacon on top of the chicken, followed by the Romain lettuce. Spread a small bit of aioli on the top buns(to help them stay on!) and place them on the prepared sandwiches. 
  • Serve immediately, with a side of french fries or chips.
  • Enjoy!

Notes

Any leftover Cajun chicken sandwiches can be stored tightly wrapped in plastic wrap in the fridge for up to 3 days!
