Spicy Cajun Chicken Sandwich Recipe
This spicy Cajun chicken sandwich recipe is sure to be a hit with the whole family! Juicy fried chicken, topped with fresh lettuce, crispy bacon, and spicy Cajun aioli, this delicious recipe is perfect for busy weeknights, dinner parties, get-togethers, and more!

Do you remember last spring/summer when McDonald’s released a specialty Cajun chicken sandwich? Or was that two years ago? Is it an annual thing? I don’t know, time really begins to blur the older one gets.
Anyway, I’m sure I’m not the only one who remembers the McDonald’s Cajun McChicken or whatever they called it. Just like I’m sure I can’t be the only one who thought it sounded downright delicious.
And while I might have been sold on this tasty sandwich idea the moment I saw an ad for it. I never actually got around to trying one. Partly because I live in the middle of nowhere, partly because I’m not really a fast food kind of person. But mostly because my older brother and dad did have one, and they weren’t impressed. At all.

Still, a cajun chicken sandwich, sounded so good to me that this recipe has been sitting on my list of things to make, ever since I originally saw it advertised.
It might have taken a while, but I can finally say I got around to trying a spicy Cajun chicken sandwich. It wasn’t one from a fast food place, but rather my own homemade version!
Let’s just say it’s hard to go wrong with a spicy chicken sandwich, and this easy recipe is no expectation. I’m not going to try and say this is the best chicken sandwich ever or the easiest, there are lots of great chicken sandwich recipes out there.

But I will say that this Cajun chicken sandwich is downright delicious! It’s packed full of flavor, with just enough kick. I added some lettuce for health of course and some bacon because you can’t go wrong with bacon. To create what might just be my new favorite chicken sandwich.
This recipe is easy to make, perfect for any occasion, and is sure to be a hit with the family!

How to Make Cajun Chicken Sandwiches (recipe)
Ingredients
- Buns, I used brioche buns, but you can use any kind of bun you like! You can even sub your favorite bread in place of the buns!
- melted butter, for toasting the buns
- fried chicken, you can also use grilled chicken for this recipe
- Romain lettuce, washed and roughly chopped
- Crispy bacon
- Cajun Aioli, or Cajun mayo
Additional topping ideas
- red onion
- tomatoes
- cheese, cheddar cheese, and Monterey Jack cheese are both great options!
- pickles
- hot sauce

Directions
Cook your chicken. I used my oven-fried chicken recipe for these sandwiches, but you can use any fried chicken recipe you like, or use premade fried chicken patties!
In a large skillet cook your bacon until nicely browned and crispy. Remove the bacon from the pan and set aside until ready to use.
Heat a skillet over medium heat, using the melted butter, butter both halves of all four buns, then place one half of a bun into the hot skillet, and toast until golden brown.
Remove the half of bun from the skillet, and repeat with the remaining buns. (follow the same steps if you are using bread instead of buns!)
Once all the buns are toasted, and your chicken is cooked(if you are working with raw chicken be sure it has reached an internal temperature of 165 degrees F) it’s time to assemble the sandwiches.
Spread a generous amount of Cajun aioli on the bottom buns, then place one piece of chicken on each bun. Place the bacon on top of the chicken, followed by the Romain lettuce. Spread a small bit of aioli on the top buns(to help them stay on!) and place them on the prepared sandwiches.
Serve immediately, with a side of french fries or chips.

Recipe Notes
Any leftover Cajun chicken sandwiches can be stored tightly wrapped in plastic wrap in the fridge for up to 3 days!
